Vietnamese rice paper rolls are a fresh, light and healthy option that combine all of the quintessential flavours of south east Asia, without the unhealthy fats that can be associated with some of the spring roll and noodle dishes that we all love to indulge in from time to time. This makes them an ideal option for a convenient, quick and light meal to fit in with any one of our Lose Baby Weight plans.
For that reason, today’s winning recipe comes from Natasha Faulkner (@barbie_smurf) – her healthy recipe for Vietnamese rice paper rolls offers us everything we love about this cuisine, without any of the guilty fats. To make the rice paper rolls at home, simply grab some rice paper from your local supermarket or Asian grocery store, and prepare all of your fresh ingredients for the filling. Natasha has opted for a combination of chicken, lettuce, cucumber, capsicum and carrot – a wonderfully healthy array of low-fat, nutritious ingredients. You can taper your choice around your favourites; pork and prawn is a classic Vietnamese combination, or marinated tofu is a really healthy vegetarian option and a great alternative to meat.
Once you’ve finely sliced your vegetables, fill a mixing bowl or saucepan with warm water, ready to dip the dried rice paper in. Take your rice paper and plunge into the water – it will become very soft and stretchy. Taking good care not to rip it, lie the soft rice paper on a plate, and place a selection of your ingredients in the middle, before wrapping it up parcel-like into a little cylinder. Serve with your choice of dipping sauces – Natasha has gone for a choice of sweet chilli and soy sauce – delicious!
