Today’s daily instagram winner is Kat Brown (@imnotcrazyimjustorganised) – with her healthy recipe for left-over Mexican pork with a rocket, spinach, tomato, avocado and feta salad. A flavour sensation, this delicious salad is not only an array of fantastic, healthy ingredients, it’s also a great way to utilise left-overs from the day before, which means less time in the kitchen! A fantastic option for busy mums, this healthy recipe would be an excellent addition to one of our lose baby weight plans, and adds a bit of spice to your repertoire!

To make your own Mexican style pork, get yourself some pork scotch fillet, slice and brown in a pan and then remove from heat. Cook off some onion and garlic, and add cumin, coriander and bay leaves. Throw in a can of diced tomatoes, and half a cup of water. Add the pork to the mix, and simmer for about an hour and a half, or until the pork is tender. Finally, shred the pork with a fork, and bring the mixture to the boil gently to thicken it up. Add some fresh, sliced chilli and your delicious Mexican pork is ready to go. It’s great in a tortilla wrap or with rice, but we love Kat’s salad of rocket, spinach, tomato, avocado and feta – a quick, healthy recipe that will help you lose baby weight and achieve your weight loss goals.
