This is a great salad to include in your Lose Baby Weight healthy eating plan as the heavy Caesar dressing is lightened up in this healthy version of the classic – we use fat free yoghurt to keep a creamy texture to the dressing, but to really cut out the calories.
Ingredients
- 2 x 150g chicken breasts, skinless and boneless
- 1 tsp. olive oil
- 1 tbsp. lemon juice
- 1 tsp. dried thyme
- Salt and pepper
- 1 garlic clove
- 1.5 tbsp. mayonnaise
- 2 tbsp. fat free plain yoghurt
- 2 anchovy fillets
- 1 garlic clove
- 1/2 red capsicum – thinly sliced
- 1 tsp. lemon juice
- Few drops of Worcestershire sauce
- ½ tsp. Dijon mustard
- Chilli flakes, to taste
- 1 lettuce, leaves removed
- Large handful fresh rocket leaves
- 15g parmesan shavings
Method
- Make deep cuts in the chicken breasts. Place into a bowl. Sprinkle with 1 tsp. olive oil, 1 tbsp. lemon juice, 1 tsp. dried thyme and salt and pepper. Mince one garlic clove and add to the chicken. Stir to coat everything, then cover and leave in the fridge for an hour.
- In a blender, combine the mayonnaise, yoghurt, anchovy fillets, garlic clove, lemon juice, Dijon mustard, Worcestershire sauce and chilli flakes. Blitz until smooth. Taste and add more lemon juice, Worcestershire sauce or chilli flakes as desired. If it is too thick, thin with a tiny bit of skim milk.
- Cook the chicken by heating a griddle pan. Cook the chicken on either side for 5-8 minutes until golden and charred. Once cooked, leave to cool for 5 minutes, then slice thinly. Toss the chicken with the lettuce leaves, capsicum and rocket in a bowl. Add the dressing and toss to combine. Divide between two plates and top with parmesan shavings.
