Lose Baby Weight- Date and Walnut Pudding

28_day_challengeIngredients

Pudding

  • 1 cup Wholemeal Self Raising Flour
  • 1 teaspoon baking powder
  • 1 tablespoon coconut sugar
  • 6 dried dates (chopped)
  • 1/3 cup walnuts (chopped)
  • 1/2 cup oat milk

Sauce

  • 12 dried dates (finely sliced)
  • 3/4 cup of water

 

Method

  • Pre heat oven to 180 degrees
  • Place all pudding ingredients in a bowl and mix.
  • Divide mixture into muffin tray
  • Bake for approx. 10-15 minutes
  • Next make your sauce by placing the finely sliced dates and water in a saucepan and simmer until dates have broken down. I used a whisk to get some of the lumps out.
  • Add more water if required – depending how think you want your sauce.
  • Once puddings are cooked, place on plate and top with sauce
  • Serve with Greek yoghurt and a sprinkle of cinnamon.
