Lose Baby Weight- Cookie Dough Truffles

Ingredients 300_250_before_and_after_weightloss_stories

  • 1/3 cup softened Butter
  • 1/3 cup coconut sugar
  • 3 tsp vanilla extract
  • 1 cup wholemeal SR flour
  • 75 grams dark choc bits
  • 150 grams dark chocolate
  • 1 tsp coconut oil

Method

  • Mix softened butter, coconut sugar and vanilla extract together in a bowl until well combined.
  • Add wholemeal SR flour and dark choc bits and combine until crumbly dough mixture.
  • Wet your hands and using a teaspoon to measure, roll your cookie dough into 20 individual balls on a tray. Place in freezer for 10 mins.
  • Melt your dark chocolate and coconut oil in the microwave – approx 1 min
  • Take your cookie dough balls out of the freezer, roll each ball through the melted chocolate and replace on the tray until all balls are covered.
  • Decorate with remaining chocolate or sprinkle a touch of sea salt, nuts, coconut or whatever is your taste.
  • Replace in freezer for a couple of minutes until set and then enjoy!

Makes 20 truffles, 113 calories per truffle.
