We recently ran a Healthy Baking Competition on our Private Facebook Support Group for REAL MUMS to send in their healthy and yummy baking recipes that can be enjoyed while following a healthy eating plan and it was a HUGE success – so we have decided to run it again!
Today we have the first AMAZING and YUMMY recipe for you to try, Coffee Mini Muffins with Chocolate Date Sauce and a BIG Thank You to Rebecca Pickett for submitting her recipe.
Lose Baby Weight- Muffin


Muffin Ingredients

  • 1 banana (mashed)
  • 1 cup wholemeal self raising flour
  • 1/3 cup coconut cream
  • 1 Tablespoon rice malt syrup
  • 1 Tablespoon vanilla Healthy Mummy Smoothie Mix
  • 1 egg
  • 1 Tablespoon nuttlex/Coconut Oil
  • 1 teaspoon cinnamon
  • 1 cup boiling water
  • 1-2 teaspoons coffee (depending on taste)

Topping Ingredients

  • 4 medjool dates
  • 1/3 cup boiling water
  • 1 teaspoon maple syrup
  • 1 cap full of vanilla essence
  • 1 Tablespoon rice malt syrup
  • 6 squares 70% cocoa dark chocolate
  • Any fruit/coconut to put on top of sauce that you desire (I used strawberry)




  • Preheat oven to 180°c,  grease mini muffin trays
  • Put boiling water and coffee in a cup and mix together
  • Add that, and all other ingredients together and mix well.
  • Spoon mixture in to mini muffin trays and bake for 10-12 minutes (depending on oven)


  • Take pits out from dates and chop dates into quite small bits and add to boiling water
  • Leave for half hour until dates are soft
  • Add dates and water to saucepan and add maple syrup and vanilla
  • Cook on medium heat til dates break down a bit more, and then add rice malt syrup, turn down to simmer and squash dates so they make a smooth paste
  • Add the chocolate squares
  • When choc is melted take off heat.
  • Spoon a bit of sauce on to muffin and enjoy!
  • I added a strawberry on top of mine, but coconut or any berries/slice of banana is delicious too!

Makes 24 mini muffins/12 serves
One serve is 2 mini muffins with sauce
