Motivating mum Filiz has been following the Lose Baby Weight healthy eating plans and 28 day weight loss challenges and has lost 25kg.
Today Filiz has sent in her her recipe for a healthy coconut ice-cream. This ice-cream can be enjoyed by the whole family as a healthy dessert and won’t throw you off your healthy eating.
Ingredients
- 270 ml Coconut Milk
- 3 tbsp Rice Malt Syrup
- 2 tbsp Coconut Oil
- 2 cups Shredded Coconut
- Pinch of Sea Salt
- Packet of Nestle Dark Chocolate Melts
Method
- Line a loaf tin or any tin you have with some baking paper and set aside
- In a saucepan on a medium heat combine coconut milk, rice malt syrup, coconut oil and salt and stir until the coconut oil has melted- this takes around 3 mins
- Then remove from heat and add the shredded coconut and mix well
- Pour the mixture into a lined loaf tin and freeze overnight to set
- Once the ice-cream has set, melt your dark chocolate in 30 second intervals in the microwave- stirring well every 30 seconds
- Once chocolate is melted, poor over ice-cream and pop back in the freezer to set
- Once the chocolate is set, slice into 14 pieces and enjoy
The ice-cream can be stored in the freezer in an airtight container ( if it lasts that long!)
