Mum of 2 Kaylie Sanders has been following the Lose Baby Weight healthy eating plans for the past 6 months and has sent in her incredibly easy and delicious low calorie Citrus Coconut Cake.


  • 125g of Unsweetened Apple Sauce
  • 1cup of Natvia/Coconut Sugar/any natural sweetener you have
  • 1tbsp of Lemon rind
  • 1tbsp of Lime rind
  • 2 eggs
  • 1cup of Self Raising Wholemeal Flour
  • 3/4 Coconut (shredded or dessicated)
  • 1cup of Milk of your choice
  • Greek or Coconut Yogurt to serve



  • Preheat oven to 160 fan forced
  • Line a cake tin with greaseproof paper
  • Beat apple sauce and sweetener of your choice together until smooth
  •  Add eggs and beat until blended
  •  Add lemon rind, flour, coconut and milk and mix well
  • Poor into lined cake tin cook for approx 20mins or until golden brown
  • Once cooled slice into 16 slices
  •  Serve with yoghurt of choice
