To celebrate our 5th birthday, we have this super yummy Healthy Chocolate Mug Cake With Warm Caramel Sauce for you all to try and a big thank you to mum Rachel Taylor for sharing her recipe with us.
Ingredients
- 4 tbls coconut milk
- 1 tbls coconut sugar
- 1/4 tsp vanilla essence
Chocolate Cake
- 4 tbls wholemeal self raising flour
- 3 tbls low fat milk
- 1 tbls rice malt syrup/honey
- 1 tbls cacao/cocoa
Method
- You want to make the caramel sauce first by whisking together the ingredients in a mug with a fork until well combined.
- Microwave in 30 seconds increments, whisking between each, until thick and dark (about 2-3 minutes)
- Set aside to make cake
- To make the cake mix all the ingredients together in a bowl mix together, pour into mug
- Microwave for approx 60 seconds (depending on your microwave)
- Run a butter knife around the edges of the cake and turn out onto bowl
- Pour over caramel sauce and enjoy!
