You may think of ice-cream as a summer treat but this dessert will make you think again.
Quick and easy to make, this ‘ice-cream’ frozen yoghurt is fresh, tangy, creamy and good for you! It may taste like comfort food but at only 116 cal per serve it won’t affect your waistline and the whole family will love it.

Mint Ice Cream

And with ingredients such as Greek Yoghurt and fresh mint, this dessert is low in fat but high in protein and nutrients. Mint is an amazing herb containing a very high concentration of vitamin C, providing an excellent boost for the immune system. Spinach is also high in a number of vitamins including C, A, E and K, as well as protein, folic acid and omega-3s- all beneficial in pregnancy and breastfeeding.

This treat is delicious on its own or can be given a little extra indulgence by drizzling a small amount of melted dark chocolate over the top.
These ingredients are low cost and always in season – to be enjoyed any time of year!

  • 1 cup full cream Greek Yoghurt
  • ½ tsp vanilla essence
  • 2 tsp pureed spinach leaves (optional)
  • ½ tsp natural peppermint essence
  • 2 packets Stevia (or other natural sugar substitute- I find natvia doesn’t have the bitter aftertaste)
  • 10g finely chopped 70% dark chocolate
  • 1tbsp chopped fresh mint leaves

Combine all ingredients and mix well.
Freeze, covered, for approximately 3 hours (if too frozen, leave out for 30mins before serving)
