We have another yummy recipe submission for the Healthy Baking Competition that we are running on our Private Facebook Support Group where members can send in their own super creative, healthy and YUMMY baking recipes that can be enjoyed while following a healthy eating plan.

Ingredients
Base
- 125 g coconut oil melted
- 50 g macadamia meal (or sub almond meal for similar result)
- 200g Italian lady finger biscuits
- 1/2 c coconut
- 2 tbs lemon juice fresh squeezed
Icing
- 200g ricotta (I used full fat)
- 2tbs maple agave syrup (or sub pure maple syrup)
- 2 tbs lemon juice fresh squeezed
Method
- Place biscuits in food processor until fine and put in a bowl.
- Add macadamia meal, coconut, lemon juice and combine lightly with a spoon. Then pour in melted coconut oil and combine with spoon.
- Once mixed place in a long slice tin (tin I used is as long as bread tin but just bit wider so as slice stays thick.) Line with a lightly sprayed with oil grease proof paper and pat down the ingredients in to tin firmly. Freeze for at least 10mins.
- While chilling make icing.
- Whip together ricotta lemon juice and maple agave syrup til bit fluffy doesn’t take long. Then put aside in fridge for a while to set little. Then pull out base from freezer and pour icing on top and spread, can sprinkle 1/2 tbs of coconut over top for presentation at this point if desired. Then pop in freezer covered for at least 15mins to set or until needed.
- Cut up in to 16 pieces and serve immediately.
