Biscuit base

  • 1/4 cup coconut oil (melted)
  • 1/4 cup mayple syurp
  • 1tsp vanilla extract
  • 1 egg
  • 1 cup wholemeal self raising flour


  • 1/2 banana mashed
  • 1 cup raspberries
  • 1/2 tbsp maple syrup


  • Preheat oven to 180°C and line a baking tray with baking paper
  • Place jam ingredients in saucepan and place on medium heat
  • Stir regularly until mixture thickens to a ‘jam’ consistency (took me about 10 mins on my stove), set aside to cool.
  • Place wet biscuit ingredients in a bowl and whisk
  • When they are well combined add the flour a bit at a time and whisk in
  • When the mixture gets too thick for the whisk add the remaining flour and use a wooden spoon to mix well.
  • Take heaped teaspoons of the mixture and roll into balls and place on the baking tray
  • Dust your thumb with flour and press down in the middle of each ball to make an indentation (flour stops the mixture from sticking to your thumb)
  • Place half a teaspoon of jam mixture in each indentation.
  • Bake in preheated oven for 10-15 mins, until golden

Makes 15 biscuits and 88 calories per biscuit
