Ingredients
Biscuit base
- 1/4 cup coconut oil (melted)
- 1/4 cup mayple syurp
- 1tsp vanilla extract
- 1 egg
- 1 cup wholemeal self raising flour
Jam
- 1/2 banana mashed
- 1 cup raspberries
- 1/2 tbsp maple syrup
Method
- Preheat oven to 180°C and line a baking tray with baking paper
- Place jam ingredients in saucepan and place on medium heat
- Stir regularly until mixture thickens to a ‘jam’ consistency (took me about 10 mins on my stove), set aside to cool.
- Place wet biscuit ingredients in a bowl and whisk
- When they are well combined add the flour a bit at a time and whisk in
- When the mixture gets too thick for the whisk add the remaining flour and use a wooden spoon to mix well.
- Take heaped teaspoons of the mixture and roll into balls and place on the baking tray
- Dust your thumb with flour and press down in the middle of each ball to make an indentation (flour stops the mixture from sticking to your thumb)
- Place half a teaspoon of jam mixture in each indentation.
- Bake in preheated oven for 10-15 mins, until golden
Makes 15 biscuits and 88 calories per biscuit
