Everyone is looking for the best way to lose weight, and while everyone’s situations are different, including as many vegetables as possible into your healthy eating plan gives you the very best chance to lose weight.
In general,most fresh vegetables are high in fibre, vitamins, minerals and antioxidants, and low in calories, making them filling, nutritious and beneficial for your digestive system.
This recipe is packed with the goodness of beetroot, a vegetable that is rich in fibre, folic acid, and Vitamin C. If that isn’t enough, beetroot is thought to have cancer-fighting properties also.
These patties are a good substitute for rissoles and hamburger patties, if you want to have a meat-free meal, or if you’re a vegetarian.
- 1 can of kidney beans, rinsed and drained
- 3 beets, peeled with tops removed
- 1 brown onion
- 1 large egg
- ½ cup wholemeal flour
- 1 clove garlic
- 1 tablespoon of dijon mustard
- Cracked pepper, to taste
- Salad mix, to serve
- Squeeze of lemon
- Substitute the kidney beans for cannellini beans
- Halve the amount of beetroot and replace with grated carrot instead
- Use chickpeas instead of beans
- Grated sweet potato can be used instead of beetroot
- Preheat oven to 190 degrees and line a tray with baking paper.
- In a food processor or blender, blend the kidney beans and set aside.
- Grate the beetroot, onion and garlic, then add to the kidney beans in a large bowl.
- Add wholemeal flour, dijon mustard, egg and pepper to bean and beetroot mixture and stir until well combined.
- Form the mixture into medium sized patties. If the mixture won’t form into patties, add a little more flour to the mix to ensure it sticks together.
- Place the patties on the baking tray and bake for 30 – 40 minutes until the the outside is crispy.
- Squeeze a little fresh lemon on the patties and serve alongside salad greens like rocket and baby spinach.
