You’ll have to bake a double batch of these yummy wholemeal apple and oat cookies because they’ll be gone a few minutes. Packed full of healthy goodness and at only 106 calories, everyone will love these and they make the perfect snack if you’re following a healthy weight loss plan.
Ingredients
- 3/4 cup wholemeal flour (self raising)
- 3/4 cup oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon (can use more if you love cinnamon)
- 1 egg
- 1 teaspoon vanilla extract
- 2 tablespoons coconut oil
- 1/3 cup maple syrup
- 2 tablespoons water
- 1 medium apple (diced into small pieces)
Method
- Line baking tray with baking paper and set aside.
- Preheat the oven to 160 degrees.
- Add flour, oats, baking powder and cinnamon into a bowl and mix to combine and set aside.
- Mix egg, vanilla, coconut oil, maple syrup and water together and once combined, add to flour mixture. Mix until combined but don’t over mix.
- Fold in diced apple.
- Place spoonfuls of mixture onto baking tray. Flatten slightly and bake for approx 15 minutes (time may vary depending on your oven).
- Once cooked, place on wire rack to cool.
Makes 10 large cookies at 106 calories each.
