We love taking a traditionally unhealthy recipes and asking our 28 Day Weight Loss Challenge nutritionists to give it a guilt free make over in to a healthy recipe version.
And hoorah this is what the very clever team have done with this delicious White Chocolate Fudge Recipe.
Plus this one is another super easy one to make and can be incorporated into your weight loss plan and is great for making ahead in big batches for healthy snacks.
This recipe serves 6. Leftovers can be stored in an airtight container in the fridge.
Ingredients (Makes 6 serves)
- 1/3 cup instant milk powder (25 grams)
- 1/4 cup almond meal (37.5 grams)
- 1/4 cup coconut flour (30 grams)
- 2 & 1/2 tablespoons melted coconut oil (50 mls)
- 1 & 1/2 tablespoons rice malt syrup (30 mls)
- 2 & 1/2 tablespoons goji berries (25 grams)
- 3 teaspoons water (15 mls)
- 1 teaspoon vanilla extract (5 mls)
Method
- Line a small rectangular dish or container (approximately 10cm x 20cm) with baking paper.
- Combine all ingredients and mix well.
- Press into base of the container and smooth the top. Refrigerate to set (at least 30 minutes).
- Cut into 6 slices to serve, 1 slice is 1 serve.
- Store leftovers in an airtight container in the fridge.
