Feel free to add your own flair to this recipe:

  • Fresh guacamole
  • Grilled corn on the cob
  • Chunks of fresh mango

Fajitas are a great way to pack lots of healthy eating vegetables into your meal.
Try to find wholemeal fajitas if you can – they are available in most supermarkets.


  • 1 large chicken breast, diced
  • 2 red, green or yellow capsicums, diced
  • 2 red onions, peeled and sliced
  • 2 tbsp olive oil
  • Juice and zest of 1 lime
  • 1 tsp minced garlic
  • 1 tsp minced chilli (optional)
  • ½ cup fresh coriander leaves
  • 4 tortillas, wholemeal if possible

  • Heat 1 tbsp of the oil in a grill pan over med/high heat.
  • Add the garlic, chilli, capsicum and onions and fry until charred.
  • Remove from the pan and set aside.
  • Heat the other tbsp of oil and brown the chicken all over.
  • Throw the other vegetables back in with the chicken and cook for a further few minutes.
  • Add the lime juice and zest before removing from the heat.
  • Fill the wraps with the chicken and veggies, as well as the coriander.

Serves: 4. Calories per serve: 220.
