For a simple healthy eating meal that the whole family will love, you can’t go past some sizzling fajitas.
Feel free to add your own flair to this recipe:
- Fresh guacamole
- Grilled corn on the cob
- Chunks of fresh mango
Fajitas are a great way to pack lots of healthy eating vegetables into your meal.
Try to find wholemeal fajitas if you can – they are available in most supermarkets.
Ingredients:
- 1 large chicken breast, diced
- 2 red, green or yellow capsicums, diced
- 2 red onions, peeled and sliced
- 2 tbsp olive oil
- Juice and zest of 1 lime
- 1 tsp minced garlic
- 1 tsp minced chilli (optional)
- ½ cup fresh coriander leaves
- 4 tortillas, wholemeal if possible
Method:
- Heat 1 tbsp of the oil in a grill pan over med/high heat.
- Add the garlic, chilli, capsicum and onions and fry until charred.
- Remove from the pan and set aside.
- Heat the other tbsp of oil and brown the chicken all over.
- Throw the other vegetables back in with the chicken and cook for a further few minutes.
- Add the lime juice and zest before removing from the heat.
- Fill the wraps with the chicken and veggies, as well as the coriander.
Serves: 4. Calories per serve: 220.
