Lose Baby Weight-tiramisu cupcakes


  • 1/4C Natvia/Stevia
  • 1/4C Apple sauce (puree)
  • 2 Eggs
  • 1/2tsp Vanilla essence
  • 1/2C Almond meal
  • 1/4C Coconut flour
  • 3/4tsp Baking powder
  • 1/4tsp BiCarb Soda
  • 3/4C Unsweetened almond milk
  • 1tsp Instant coffee (more if you like coffee)
  • 1TBSP cocoa or cacao

Cream Cheese Frosting

  • 220g light cream cheese
  • 1/3C natvia or icing sugar
  • 1/2tsp vanilla essence


  • Bring almond milk to simmer in sauce pan over medium heat then remove and mix in coffee. Set aside to cool
  • Preheat oven to 180fanforced and line or spray muffin tray
  • Sift flours and baking soda into large bowl
  • In another bowl beat apple sauce and sugar/natvia, then beat in eggs and vanilla.
  • Whisk Apple sauce mixture into flour mixture then add the coffee milk, whisking until combined.
  •  Divide evenly into muffin tray and bake for 15-20mins.

Cream cheese frosting

  • Beat soften cream-cheese with natvia and vanilla essence
  • Pipe or ice onto cooled cupcakes
  • Dust with cocoa or grated dark chocolate.

Makes 14-16 mini cupcakes
