Here is a light healthy eating salad that works well as a starter or as a side dish to some grilled meat or fish.
Figs are a lovely way to add sweetness to your meals, and the small amount of blue cheese really packs in a lot of flavour.
Figs are high in fibre which keep you feeling fuller for longer. They also contain calcium and vitamin B6 – so they can be a great partner when you are trying to lose pregnancy weight.
Optional extras:
- If you prefer, use feta or goat’s cheese instead of the blue cheese
- Toss in a few fresh raspberries or sliced pear for more sweetness
- Sprinkle with crumbled walnuts
- Add some thinly sliced prosciutto
- For some zing add some finely chopped spring onions
- Pop in some homemade crispy croutons
Ingredients:
- 4 fresh figs, cut into wedges
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2 cups rocket lettuce or baby spinach leaves
- 40g blue cheese, crumbled
- Salt and pepper, to taste
Method:
- In a small bowl, combine the oil and vinegar. Season to taste.
- In a large bowl, place the lettuce, figs and cheese. Add the dressing.
- Toss gently before serving into individual glasses.
Serves: 4. Calories per serve: 145.
