Elisha Danine, Nutritionist for the January 28 Day Weight Loss Challenge shares some easy ways to get organised and ready for Week 4 of the Challenge to make meal prep a breeze:
- Prepare and cook the Corn & Quinoa Fritters the day before you are serving them. Make a few extra to freeze up for lunches down the track. The more healthy, pre-cooked foods you can have on hand the better.
- For the Easy Apple Torte choosing the best apple to bake with may make all the difference in taste and sweetness. The best apples for baking include Fuji, Granny Smith, and Pink Lady.
- Chop up and mix all the ingredients for the Mini Kale & Egg Quiches the night before you want to eat them. That way you can simply wake up and pour your batter into a muffin tray and wait for your breaky to cook without spending too much time in the kitchen.
- For the Choc-Top Banana Soft Serve, carefully heat the chocolate chips in the microwave in 20 second increments. Stir after each reheat and be careful not to burn.
- For the Rosewater & Pistachio Custard – be careful not to add too much rosewater. It can be very overpowering and sickly sweet. Rose water can be found in most supermarkets, but if you have trouble finding some – you can easily pick it up from many delicatessens or an Indian or middle eastern grocery store.
- Be sure to use fresh dates not dried for the Coconut Date Delights. Be careful to remove all pits before rolling. If the coconut flakes aren’t sticking well, roll in a little coconut oil first.
