Hi Lose Baby Weight – I’m a big fan of egg sandwiches but all that butter, mayo and bread does not fit in with my new eating habits so I made an alternative today that was so yummy I had to share!

Healthy egg sandwich
  • 1 boiled egg, mashed with fork.
  • 1 teaspoon hommus
  • 1 teaspoon water
  • 1 pita pocket, wholemeal
  • handful mixed lettuce
  • handful baby spinach leaves
  • Cracked pepper

Mix egg, hommus and water together.  Season with cracked pepper to taste.
Pile lettuce and spinach into pita pocket and spoon egg mixture on top.

Asparagus Feta Frittata
  • 3 eggs
  • 45g capsicum – diced
  • 120g grated zucchini (squeeze out liquid – 100g)
  • 50g reduced fat feta cheese – diced
  • 110g asparagus
  • 40g Mozzarella cheese

Preheat grill
Heat a non stick fry pan.
Whisk eggs, add Zucchini, Asparagus, feta and capsicum and lightly mix.
Pour into frying pan, cook until almost set, sprinkle with Mozzarella cheese and place under grill until golden.
Serves 2 – 250cal per serve. (thanks to Sandra Withers)
