Corn & Quinoa Fritters

Serves 1
Prep time – 15 mins
Cooking time – 6 mins
Prepare these fritters ahead of time and refrigerate for a quick, easy and healthy meal. Reheat to serve.

Ingredients (Makes 1 serve)

    • 1/4 cup quinoa, uncooked (45 grams)
    • 1/4 cup corn kernels, fresh or tinned (40 grams)table
    • 1 teaspoon grated Parmesan (3 grams)
    • 2 teaspoons plain wholemeal flour (5 grams)
    • 1 free-range eggs (50 grams)
    • 1 spring onion (15 grams)
    • 1/8 diced red onion (12.5 grams)
    • salt
    • pepper
    • 2 teaspoons coconut oil (10 mls)
    • 1 teaspoon sweet chilli sauce (5 mls)

Method

  • Cook quinoa according to packet directions and allow to cool.
  • Combine cooled quinoa, corn, half the Parmesan, flour, egg, red onion and a pinch of salt and pepper.
  • Heat oil in a fry pan over a medium-high heat. Spoon in fritter batter to make 3 fritters per serve. Shallow fry for 2-3 minutes on each side until golden and heated through.
  • Drain on paper towel before serving.
  • Serve with a drizzle of sweet chilli sauce, sliced spring onion and remaining Parmesan.
