INGREDIENTS
Serves 17
- 2 cups wholemeal plain flour
- 3 Tbsp shredded coconut
- 2 tsps baking powder
- 4 Tbsp coconut sugar
- 2 tsps natural vanilla extract
- 2 large eggs
- 2 mashed ripe medium bananas
- 300g pineapple (fresh or tinned, drained)
- 1 cup water
- Extra shredded coconut to sprinkle on top (approx 2 tbsp)
METHOD
- Preheat oven to 180 degrees celcius and combine the first 4 ingredients in a bowl.
- In a blender (or food processor) combine the vanilla, egg, banana and liquid, mixing well. Add to flour mixture.
- Add pineapple to blender and blitz a few times, just to break it up a little. Add to rest of ingredients.
- Gently stir together.
- Spoon evenly into non-stick or lined muffin tray holes and sprinkle with coconut.
- Bake in the oven for around 20-25 minutes or until golden.
Approx. 117 calories per muffin.
