Fritters are one of those magic meals that combines basic household staples to create something that is all at once exceptionally tasty, satisfying, and very easy to make.
Though well made fritters can set you back a pretty penny in a cafe. Home made fritters are actually extremely economical. Having said that, we have gone all out in this recipe with avocado and smoked salmon which are less than economical accompaniments, but the fritters are also beautiful by themselves.

Ingredients
- 1/3 cups corn kernel, fresh or tinned (40 grams)
- 3/4 small zucchinis (90 grams)
- 1/2 teaspoons lemon thyme, fresh or dried (0.5 grams)
- 1 free range eggs (50 grams)
- 1/3 tablespoons plain wholemeal flour (4 grams)
- 1 teaspoons butter (4 grams)
- 2 slices smoked salmon (50 grams)
- 15 grams avocado
- salt
- pepper
Method
- Grate zucchini. Mash the avocado.
- 1 egg per serve is used in this recipe so if making for 1 separate the yolk from the white and lightly beat the yolk. If serving for two, separate the yolks and whites from 2 eggs and lightly beat the yolks and keep the whites aside, if making for 3, separate the yolks and whites from all eggs, lightly beat the yolks and keep the whites aside etc.
- Combine corn kernels and zucchini in a large bowl. Add lemon thyme, the beaten egg yolk and flour.
- Season with salt and pepper, mix to combine.
- Heat medium non-stick frypan over medium-high heat for 3 minutes. Whisk the egg white until it is frothy and has increased in volume, then fold through corn/zucchini mixture.
- Heat half the butter then add the mixture using ¼ cup measure for each fritter. Cook for approximately 2 minutes each side, or until golden. Cook in batches, covering cooked fritters in foil to keep warm.
- Place fritters on a plate, with a dollop of mashed avocado and a slice of smoked salmon.
- Sprinkle with lemon thyme. Serve immediately and enjoy!
