Strawberries and cream are a match made in heaven. Add dark chocolate and it’s just perfect! Creamy and fresh. Sweet and subtle. This dessert tastes decadent but won’t derail your healthy habits.
Coconut is becoming well known for it’s healthy fats and anti-inflammatory properties. Desiccated coconut and flour are loaded with fibre to keep you full and help your digestive system work efficiently- both crucial for weight loss.
Strawberries have amazing properties including high levels of antioxidants, vitamin C and fibre. They are also very low in calories which make them an excellent choice for a sweet treat.

Ingredients
- 250g Strawberries, finely chopped
- 2 tbsp. pure maple syrup
- ¼ tsp pure vanilla extract
- 2 tbsp. coconut oil
- 1 cup desiccated coconut
- 1 tbsp. coconut flour
- 75g dark chocolate
Method
- Simmer strawberries, vanilla and maple syrup for 4 minutes until softened. Mash with a fork or process with hand blender.
- Add coconut oil and stir until melted.
- Add coconut and coconut flour. Mix thoroughly.
- Press coconut mixture into regular-sized silicone muffin pans (or regular muffin pans with a strip of baking paper placed across). Place in the fridge.
- Melt dark chocolate. Pour over the top of coconut/strawberry mixture and place in the fridge until set.
- Remove carefully and enjoy immediately or store in an airtight container in the refrigerator.
