Do you love chocolate? Do you love caramel? If the answer is yes then keep reading as we have a healthy, nutritious and delicious Chocolate Caramel Slice that you can enjoy guilt free while following a healthy eating plan.
This slice is refined sugar free and dairy free. You could even make it gluten free by using gluten free oats.

Ingredients

Base

  • 1/4 cup dried dates, soaked in boiling water till soft
  • 1/2 cup rolled oats
  • 1/2 cup almond meal
  • 1 tbsp desiccated coconut
  • 1 tbsp cocoa
  • 2 tbsp coconut oil, melted

Caramel

  • 50g dried dates
  • 20g mayvers peanut coconut spread (can use any nut butter)

Method

  • To make the base put all ingredients into a food processor and process until combined. Line a cheesecake tin with baking paper and press mix into tin then place in fridge to set.
  • Next make the caramel by placing dates into a saucepan, cover with water and turn on high heat on the stove and allow to boil until soft
  • Add the peanut coconut spread and mix well-it should become sticky
  • Take off the heat and place in blender with 1 tbsp water and blend until smooth
  • Spread evenly onto base and place into fridge to cool/set
  • Cut into 8 pieces
  • Store in an airtight container in the fridge
