Today we have a yummy reader recipe for you all to try.  This recipe uses the Healthy Mummy Smoothie Mix so it is packed full of protein, fibre and vitamins making it a great snack to include into your healthy eating plan while losing baby weight.
This yummy treat can be made in advance and either stored in the fridge or freezer making it a great snack for busy mums.


  • 80 grams dried pitted dates (about 10-12) soaked for 5 min in hot water
  • 2 Tablespoons coconut cream
  • 2 Tablespoons cacao powder
  • 2 Tablespoons Vanilla or Chocolate Healthy Mummy Smoothie mix
  • 1/2 cup desiccated coconut, plus extra for rolling
  • 1/4 cup almond meal


  • Drain dates, place all ingredients into food processor and combine until smooth.
  • Tip out onto a chopping board and gather all together and roll into a long sausage shape – About 30cm long.
  • Place onto plate and refrigerate for an hour or more then slice into 20 slices.
  • Slices are smallish but it is quite rich so 1 or 2 pieces is more than enough to satisfy a sweet craving!
