Today we have this yummy reader recipe for you all to try that the whole family will love and including these cookies into your healthy eating plan will not derail you from losing baby weight.
Ingredients

2 tbsp of cocoa powder

1 cup of wholemeal flour

1/4 cup coconut sugar/artificial sweetener

12-14 large dark choc chips

1/2 tsp of peppermint extract

2 tbsp of rolled oats

200-250 mls (1 cup) of water
Method

In a mixing bowl, add 1 cup of flour and roughly 1 cup of water, add the water in half a cup at a time, as it may turn slightly runny.

Next add 1/4 cup of coconut sugar or artificial sweetener, which ever you prefer is fine, add in the peppermint extract, cocoa powder and rolled oats. If you feel its not enough cocoa or sugar/sweetener, add an extra spoonful .

Mix ingredients altogether until its at a sticky consistency.

Place flour onto a chopping board/plate/bench top and knead the mixture until it becomes a cookie dough (you can choose to add chocolate chips through the mixture while your kneading the mixture together)

Once you have it to a dough consistency, roll it out until its about 20cms long.

Grab a knife, and cut thin slices , then flatten them to your desired thickness/thinness.

Place them on a baking tray, you should be able to roughly get 14 cookies to a batch, depending on thickness.

Add one large dark choc chip to the centre of the cookies, if you have chosen to mix through the choc chips, then there is no need to place any more choc chips on the cookies.

Place in the oven for 10-12 minutes on about 150 degrees.
