Ingredients
- 8 pitted medjool dates or 120grams pitted dates that have been soaked in hot water for 15 minutes then drained.
- 1/3 cup raw cashews
- 2 tablespoons cacao (can sub with cocoa)
- 1/4 cup desiccated coconut (can use shredded)
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup
- 1/3 cup peanut butter
- 2 tablespoon water
Method
- Cover tray with baking paper and set aside.
- Blitz dates until broken down and sticky.
- Add remaining ingredients and blitz until combined.
- Roll into balls and place on baking paper.
- Pop in fridge or freezer to set.
Once set…. Eat… ENJOY!
Can be stored in fridge or freezer. We prefer them from the freezer. They firm up but do not freeze solid so you can eat them straight from the freezer.
