What’s not to love when there is banana and chocolate involved?! These yummy, low fat and nutrient full Choc-Nana Ice Creams can be enjoyed as a healthy treat on a warm summers day while following your healthy eating plan.
These ice creams have several different coating options making them suitable to most families.
Ingredients
- 4 large bananas
- 50g Lindt 70% dark choc
- 1/8 c coconut oil
- 1/4 c sliced almonds (for topping)
- 1/4 c desiccated coconut (for topping)
- (1/4 c crushed peanuts for alternative topping optional)
Method
- Peel bananas and cut in to portions ( I got 16 portions out of 4 large bananas) You can change to suit your needs just adjust calories
- In a microwave safe bowl heat broken up choc and coconut oil on medium heat for approx 30 secs, stir and check and heat for a further 30 secs . I advise this as every micro is diff just keep checking constancy and stir , I only ever need approx 1 min in total .
- Place the portions of bananas on a stick of your choice (I used tooth picks) you can use skewers etc
- Next dip /roll in choc (can get messy ) then on a separate tray have topping of your choice to roll them in or sprinkle on to melted chocolate
- Then place on to grease proof paper then place in fridge to set ( approx 20mins ) then I place individual portions in snap lock bags and place in freezer to enjoy when I’m ready for an ice cream or yummy choc snack
Calories per ice cream
- 74 cals per serve with almonds/coconut topping
- 61 cals per serve just melted choc coated
- 66 cals per serve with crushed nuts topping
