This Choc Mint Chill Dessert recipe from Janet Cook is great when following a healthy eating meal plan to lose weight as it’s filled with healthy ingredients and will impress your guests.
This dessert is rich, velvety and satisfying, and can be enjoyed guilt free! With the perfect flavour combination of chocolate and mint, you will also get the health benefits of protein and bone-strengthening manganese.
The coconut cream adds healthy fats and a creamy, indulgent finish without hurting your waistline.
Ingredients
- 150g silken tofu
- 3 tbsp. chilled coconut cream
- 2 tbsp. chopped mint leaves
- ½ tsp pure vanilla extract
- ½ tsp natural peppermint extract
- 2 tsp pure maple syrup
- 1 tbsp cacao/cocoa
Method
- Combine all ingredients and mix well until smooth.
- Divide into two individual serving dishes and place in the freezer and leave for approximately 30 minutes or until just starting to freeze.
- Alternatively, fully freeze and remove from freezer about 20-30 mins prior to serving.
