Chilli Roast Beef & Salad Sandwich

An easy to prepare, gourmet sandwich. Adjust ingredients as required to suit your tastes or what you have in the fridge.This Sandwich is great for your work lunch box or whip up at home to ensure you’re eating something nutritious.


  • 1/2 small red capsicums (50 grams)
  • 2 teaspoons sweet chilli sauce (10 mls)
  • 1 tablespoons reduced fat mayonnaise (20 grams)
  • 1 spring onions (15 grams)
  • 2 slices wholegrain/gluten free etc bread of choice (80 grams)
  • 50 grams roast beef, shaved luncheon meat
  • 1/2 cups cos lettuce (15 grams)
  • salt
  • pepper

  • Place the capsicum skin side up on a piece of aluminium foil and grill for 5-7 minutes until the skin blisters. Wrap in the foil to cool, then remove and discard the skin and slice.
  • In a small bowl combine the sweet chilli sauce with mayonnaise and chopped spring onion.
  • Spread the sweet chilli sauce mixture over a slice of multigrain bread.
  • Top with the slices of roast beef, sliced grilled capsicum, lettuce and remaining slice of bread.
  • Season with salt and pepper if desired.
