Chicken Skewers With Mango Salad

An easy to assemble family dinner. Marinate the chicken ahead of time if you like and then just cook and prepare the salad when it’s dinner time. This recipe serves 1 so if you are preparing it for the whole family adjust ingredient quantities accordingly – please note that in the 28 Day Challenge the customiser tool will do this for you when you select serve size.


  • 20mls lemon juice
  • 2 teaspoons tamari – gluten free soy sauce (10 mls)
  • 1/2 teaspoon of fresh ginger, grated (2 grams)
  • 150 grams chicken breast fillets
  • 2 skewers
  • 5 mint leaves (2.5 grams)
  • approx. 1 cheek of mango, unseeded (100 grams)
  • 1/4 of a Lebanese cucumber (50 grams)
  • 1/4 of a medium red onion (25 grams)
  • 1 teaspoon of sweet chilli sauce (5mls)
  • 10mls lime juice

PLEASE NOTE: When preparing recipes please use the specific ingredient quantities as outlined in brackets i.e. grams/mls etc. Measurement conversions e.g cup quantities or tablespoons are given as a guide only.

  • Combine the lemon juice with tamari and half the finely diced ginger to create a marinade.
  • Dice chicken breast and pour over marinade and place in refrigerator for 10-15 minutes.
  • Thread marinated chicken onto skewers and BBQ or pan fry for 2-3 minutes on each side until cooked through.
  • Meanwhile, prepare the Mango Salad: remove the skin and stone from the mango and finely dice. Finely chop the onion, cucumber and mint leaves and combine in a bowl with the mango.
  • Combine the remaining ginger, sweet chilli sauce and lime juice and pour over the mango salsa.
  • Spoon salsa over kebabs and serve.
  • Notes:- If using wooden skewers, place skewers in chilled water for 1 hour before use to avoid them burning on the barbecue.
