A great recipe to put together all in one pan and serve the whole family so everyone can follow a healthy eating diet plan.
Try different flavour combinations to suit your tastes or what you have in the fridge. This was sent in by one of the mums following the Lose Baby Weight plans, Filiz Aygun Yilmaz.
Ingredients
- 1 cup brown rice
- 150g diced chicken breast
- 150g mushrooms, sliced
- half cup of washed baby spinach
- 1 small onion
- half tbsp olive oil
- salt and pepper
- 2 cups of chicken stock
Method
- Precook the rice by adding 1 cup of rice to 8 cups cold water, then bring to the boil and reduce the heat and cook for 25 mins until tender, drain and set aside.
- Add the chopped onion to a drop of olive oil and sautée until onion is transparent then add the diced chicken with remaining oil and cook until chicken is cooked through.
- Once chicken is cooked add the rice and mushrooms and spinach stirrin . Then slowly begin adding the stock half a cup or so at a time. Add more stock once it has fully absorbed.
- Season with salt and pepper and enjoy.
- Serves 3, one serve is 337 calories.
