Packed with nutrition, they take no time at all to throw together and can be devoured on-the-go.
Feel free to substitute with any other veggies you have on hand such as grated carrot, corn, or finely chopped capsicum.
You can also experiment with the herbs if you don’t have any parsley. Chives are nice, as is some chopped oregano.

Ingredients:
- 2 medium zucchini, grated and squeezed of excess liquid
- 2 eggs, lightly beaten
- 1 small onion, peeled and finely chopped
- ½ cup almond meal
- 100g grated low fat cheddar
- Small handful of fresh parsley leaves, finely chopped
- Salt and pepper to taste
- Olive oil spray for the pan
Method:
- Heat your oven to 200C and spray a muffin tin (or mini muffin tin) with olive oil.
- Place all ingredients into a bowl and mix gently.
- Fill the muffin tins with mixture.
- Bake for 15-20 minutes or until golden brown on top.
