As a fat-free, low-calorie food, mushrooms are high in fibre, niacin, vitamin D, vitamin B and protein, and are a highly versatile food perfect for inclusion in casseroles, bakes, stir fries, omelettes and more.
This recipe for Cheesy Stuffed Mushrooms is a great idea for a snack, entree or when paired with a fresh salad or other vegies, a top midweek meal option.
Easy to prepare with budget ingredients, this delicious recipe will be a winner with partners and kids too.


  • 4 large, flat field mushrooms
  • 100 grams reduced fat mozzarella cheese
  • 10 fresh pitted green olives, sliced
  • 10 cherry tomatoes, halved
  • 4 fresh basil leaves
  • Half a Spanish onion, sliced
  • 1 tablespoon olive oil
  • Juice of half a lemon

Optional Extras:

  • Substitute the mozzarella for reduced fat cheddar cheese or ricotta cheese
  • Replace the green olives with black olives
  • Instead of fresh basil, sprinkle with dried oregano
  • Replace the sliced cherry tomatoes with sliced red capsicum


  • Brush and clean the mushrooms, and cut the stem off and discard.
  • Brush the top of the mushrooms with the olive oil, and place top down on a baking tray lined with baking paper.
  • Fill the mushroom with the mozzarella cheese and bake in a preheated oven for 190 degrees Celsius for 15-20 minutes.
  • Once the cheese is melted and the mushroom has softed and cooked, remove from the oven.
  • Place equal amounts of cherry tomato, olives and onion on top of the melted cheese side of the mushroom, finishing with a fresh basil leaf on each.
  • Serve immediately with some lemon juice squeezed over the top.
