OK so it might be a bit of a stretch to call these ‘chocolates’ and I’m sure you wouldn’t fool anyone if you told them they were.
But – and it’s a big but – they are absolutely moorish and are loved by adults and toddlers alike (well in this house anyway).
By popping them into a chocolate mould (try and find something festive if you can!) you can feel as though you are having a big treat when in fact you are consuming healthy ingredients – coconut, vanilla beans and cashews.
Cashews are a slightly sweet nut, and of course coconut and vanilla are both naturally sweet – so there is absolutely no need to add anything sugar to this recipe.
The coconut oil is the best oil to use for these chocolates (any other oil would add too much of its own flavour) so if you don’t have any use honey instead.

This recipe enough mixture for around 4 moulds depending on what size you have. Feel free to halve it if you don’t need that much.

Your mixture may be slightly grainy if your blender can’t completely smooth out the coconut – don’t worry it will still taste amazing.
It’s also worthwhile noting that although the ingredients are healthy they are still high in calories (and good fats) so portion control still applies, especially if you are trying to lose weight.
These would make a fabulous gift for Christmas – for some reason anything wrapped in clear cellophane and tied with a gorgeous bow just looks so inviting!

Ingredients:
  • 1 cup of raw, unsalted cashews
  • 1 cup of desiccated coconut
  • 2 tbsp coconut oil
  • 2 tsp vanilla bean paste (or use good quality vanilla essence)
Method:
  • In a powerful blender, whiz up your cashews until very smooth.
  • Add the vanilla, coconut, and coconut oil and whiz again until smooth.
  • Use a spatula to smear the mixture into your moulds.
  • Chill in the fridge for around 2 hours or until set.
  • Pop out of the moulds and store in the fridge.

Serves: 20. Calories per serve: 82.
