healthy_eatingWhen you are trying to eat well and lose weight, certain dishes can be put aside as being ‘unhealthy’.
Risotto is traditionally made with white rice (and plenty of butter and cream) but it doesn’t have to be that way.
Today we have a new take on an old favourite – risotto made with brown rice. Flavoured with healthy mushrooms and toasted pine nuts, this dish is pure comfort on a cold night.
Mushrooms are a protein rich vegetable that are very low in calories and fat. They are a great addition to a vegetarian meal and are full of flavour.
Like other nuts, pine nuts are also high in protein which is great when you are trying to lose weight. Protein gives you a feeling of fullness which means you are less likely to overeat.
Try serving it with a handful of baby spinach to add colour, crunch and nutrition to the meal.

  • 2 tbsp pine nuts
  • 1 tbsp olive oil
  • 10 button mushrooms, chopped
  • 2 cloves of garlic, peeled and finely chopped
  • 1 large onion, peeled and finely chopped
  • 110g raw brown rice
  • 900ml vegetable stock
  • Salt and pepper to taste
  • Sprinkling of parsley leaves, to serve
  • 2 cups of baby spinach, to serve
  • Lemon wedges, to serve
  • Dry roast the pine nuts in a frying pan until golden, then set aside.
  • Heat the oil in a large frying pan and cook the garlic, onion and mushroom until soft.
  • Add the rice and cook for a further 2 minutes.
  • Add the stock, half a cup at a time. Keep stirring until it has been absorbed before adding more. Alternatively you can add all of the stock at once and then stir it occasionally until it has been absorbed.
  • Once all of the stock has been absorbed, check the seasoning and adjust if necessary.
  • Serve onto plates and sprinkle with the parsley, pine nuts, baby spinach and lemon.
