Motivating mum Michaela McAlister has been following the Lose Baby Weight healthy eating plans and challenges and has wowed us all with her amazing success.
Today she has sent in a yummy recipe for all the coconut lovers out there, healthy bounty inspired bites.

Ingredients

 Method

  • Process shredded coconut until fine
  • Add melted/soft coconut oil, Vanilla Smoothie MIX and drop of extract process until combined well
  • Roll into 16 “bites” and then refrigerate until set
  • Once the bites are set melt your dark chocolate in the microwave in 30 sec intervals – stirring well every 30 secs until melted
  • To make coating with chocolate easier and not so messy use a toothpick to dip bites into chocolate
  • Once all coated pop into the freezer to set

You can keep the bites in the fridge in an airtight container but best served at room temperature
Makes 16 “Bites”, 125 Calories per bite
