This chia pudding can be enjoyed for breakfast, a snack and even dessert while following a healthy eating plan while losing baby weight.
It is a visual delight with lots of layers that are packed full of protein, fibre and antioxidants.
Ingredients
- 1 cup of unsweetened almond milk or milk of your choice
- 1/2 cup frozen blueberries
- 3 tbsp chia seeds
- 1 tsp vanilla extract
- 1 tsp of rice malt syrup or honey
- ¼ rolled oats
- crushed almonds or any nut you prefer
- 1 sml banana
Method
- In a blender put in the milk, blueberries, vanilla and rice malt syrup and process until well combined
- In a glass pour in the blueberry mixture, add the chia seeds, and mix well
- Put in the fridge, after a few hours give the mix another stir and leave overnight so the chia seeds can expand
- In the morning the mixture will be really thick
- Put a spoon of chia pudding in a glass
- Then put some sliced bananas on top, sprinkle rolled oats and crushed nuts over the bananas, then put another layer of chia pudding and keep layering until you have three layers
