There’s a reason why the experts say that breakfast is the most important meal of the day, especially when you’re trying to lose weight.
Not only does the first meal of the day kickstart your metabolism (and set it up for a days worth of food intake), it also makes sure that our muscles are pumped full of energy, after eight hours (if you’re lucky) of snooze time.

Eating a meal rich in protein, carbs, fibre and other essential vitamin and minerals means that our individual fuel tanks are topped up so that we can start the day off right.
We all know how we feel when we skip/forget/run out of time for breakfast. Tired, fuzzy and distinctly unmotivated could best describe this state (with a healthy dose of hunger).
This is because our brain also needs a healthy hit of energy to get it started for the day ahead. Concentration levels, ability to focus and level or productivity are all enhanced when we eat breakfast.
If you fancy a change from your usual Healthy Mummy smoothie or bowl of cereal, eggs are a fantastic breakfast option.
A single egg contains 6g of muscle building, energy providing protein, all 9 essential amino acids and only 5g of fat, making it a bit of a nutritional powerhouse.
Eggs are also great for healthy eyes, hair and skin, due to their high sulphur content and wide array of vitamins and minerals.
This recipe spices things up a little with onion, capsicum and chorizo for heat. Yum!
Ingredients
- 4 large, free range eggs
- 1 red onion, finely diced
- 1 red capsicum, deseeded and sliced into wedges
- 4 ripe tomatoes, roughly chopped
- 50g chorizo sausage, diced into chunks
- 2 tbsp reduced fat cheddar cheese, grated
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 clove garlic, crushed
Directions
- Preheat the oven to 190C.
- Heat olive oil in a frypan over medium heat. Add the onion and garlic and fry till transparent.
- When onion and garlic mix is done, add chorizo, capsicum, paprika and tomatoes and cook till everything softens.
- Evenly divide the mixture into four shallow dishes and make a well in the middle of the mixture.
- Break an egg into each well and sprinkle liberally with grated cheese.
- Cook for 10-12 minutes or until eggs are set then serve.
