We’ve all been in the situation where our fruit bowl is overflowing with ripe bananas, and there just aren’t enough opportunities in the day to eat them all.
You can always freeze your ripe bananas for your Healthy Mummy Smoothies (it gives the smoothie a nice creaminess compared to using unfrozen ones).
Or you can make this delicious dessert as a special treat that the family will love!
This is comfort food at its best – and even reheats well the next day (if there’s any left).
Dates are a great way to get a hit of sweetness without adding processed sugar to a recipe.
The choc chips are optional and the dessert still tastes amazing if you decide to leave them out.
Ingredients:
- 4 ripe bananas
- 6 fresh dates (or 12 dried), pitted
- ½ cup hot water
- ½ cup chopped walnuts, hazelnuts or pistachios
- 1 tsp cinnamon
- 2 tbsp choc chips (optional)
- 4 tbsp Greek yoghurt, to serve
Method:
- Heat your oven to 180C and line a tray with baking paper.
- Place the unpeeled bananas on the tray.
- Place the dates (if using dried dates, soak them in the water for 1 hour before using) and the hot water in a small bowl on the tray.
- Bake for 15 minutes.
- Turn the bananas over, add the walnuts to the tray, and remove the dates from the oven.
- Cook the bananas and nuts for a further 10 minutes. The skin of the fruit will be blackened.
- Blend the choc chips (if using), cinnamon, dates and the water to a smooth paste.
- Remove the bananas from the oven and slice down the centre, opening up carefully.
- Fill each with ¼ of the date sauce, then top with the crushed nuts.
- Drizzle with the yoghurt and serve immediately.
