Ash Petroff has done it again! She has made this delicious bacon, eggs and kale salad! An easy lunch or dinner tasty dressed salad with a breakfast twist!
Ash says: “I would like to give a massive shout out to my hubby who thought it would be a great idea to give our kids some Easter Bunny I had hidden away from them they have been absolute feral all afternoon. Then hubby wanted bacon and eggs for dinner, and I was in no mood to make two separate meals. So on a positive note that’s where the Bacon Kale salad came to the rescue with an egg on top (because I’m an egg addict lol)
It was amazing, it was a lifesaver and totally hit the spot! So thanks hubby for wanting bacon and eggs and thanks kids for turning into the crazy rascals, with that I might not have discovered this amazing quick dinner ”
Ingredients
- 1 bag Kale salad mix
- 3 tbsp natural yoghurt,
- 1 tsp garlic
- Juice of 1 lemon
- 1/4 cup pepitas
- 2 tbsp sesame seeds
- 1 piece of lean short cut bacon
- 1 fried egg for top
Method
- Slice bacon into small squares and fry till brown
- Fry an egg per person
- Toss salad in dressing
- Put together in a bowl
- Wa-lah! dinner!
