Today we have a reader recipe (from Renee Evans which was inspired by website Eat Good For Life’s recipe for a Mint Slice which you can see here) for you all to try a yummy Avocado Mint Slice. It is gluten free, egg free and dairy free.
It is also refined sugar free and uses natural sweeteners. This is a must try recipe that the whole family will enjoy and it wont throw you off your healthy eating plan.

Ingredients

Base

  •  1 cup raw almonds
  • 1 cup pitted dates/prunes
  • 1 tbs cacao

Middle

  • 1 avocado
  • 3 tbsp coconut oil ( melted)
  • 3-4 tbsp maple syrup
  • 1 banana
  • 1/2 tsp vanilla extract
  • Approx 6-8 drops peppermint extract/oil
  • Pinch of salt

Top layer

  •  4 tbsp cacao
  • 4 tbsp coconut oil (melted again)
  • 3 tbsp maple

Method

  • Process the bottom ingredients in a food processor until combined well
  • Press into a tin
  • Process the middle layer and spread over top of the bottom layer pop in fridge or freezer while you prepare the top layer
  • Next mix the top ingredients and pour over the two layers
  • Set in fridge then slice into 20 pieces

Makes 20 pieces
