Just thought I’d write in & share my amazing, healthy dinner recipe.
I love nights where I create as I cook!
I have learnt so much from following your 28 day plan & enjoy incorporating into every meal.
My fiancé especially loved tonight’s meal 🙂

Ingredients (for the salad)
  • Shredded lettuce
  • Baby Spinach
  • Snow peas
  • Sliced cucumber
  • Tomato pieces
  • Feta
  • Pumpkin cubes (pre steamed)
Method:
  • Toss salad ingredients together in a bowl & set aside
Ingredients (for the prawns)
  • 1 tsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp ginger
  • 1 tsp chili paste
  • 1/2 lime (squeeze for juice)
  • Green peeled prawns 400g
  • 4 mushrooms diced
  • 1 diced onion
  • 1/2 capsicum diced
  • 1 minced garlic clove
Method:
  • Mix the soy sauce, oyster sauce, ginger and chilli with the green peeled prawns.
  • Lightly spray frypan with olive oil & sauté diced onion, garlic, capsicum & mushrooms.
  • Add prawns & fry off till cooked.
  • Serve salad onto plate & top with prawns & mushroom/capsicum mix.
  • Add a lime quarter to serve & enjoy!
