Easy Asian Chicken Noodles


  • Serves 1
  • Prep Time: 20 mins
  • Cooking Time: 7 mins

A simple, tasty meal that is suitable for the whole family. Noodle dishes like this are great to use up leftover veggies you may have in the fridge.

Belly Fat

Ingredients (Makes 1 serve)

    • 1 tablespoon oyster sauce (20 mls)
    • 2 teaspoons cornflour (5 grams)
    • 1/4 cup water (62.5 mls)
    • 120 grams of chicken breast fillets
    • 1/2 red capsicum (50 grams)
    • 1/3 cup snow peas (30 grams)
    • 1 clove garlic (3 grams)
    • 2 teaspoons extra virgin olive oil (10 mls)
    • 1/2 cup sliced mushrooms (37.5 grams)
    • 100 grams of wide rice noodles
    • 1 tablespoon fresh coriander (5 grams)
    • 1/4 teaspoon dried chilli flakes (0.25 grams)

  • Dissolve cornflour in water and set aside.
  • Slice chicken and place in a bowl with the oyster sauce, toss to coat.
  • Slice capsicum. Top and tail the snow peas. Finely chop the garlic. Prepare the rice noodles as per packet directions.
  • Heat the oil in a wok or frypan over high heat. Add the garlic, capsicum and mushrooms and stir fry for 2 minutes. Add chicken and marinade and stir fry for another 2 minutes.
  • Add cornflour and water mixture to the pan. Stir well and simmer for 3 minutes until sauce is thick and glossy and chicken is cooked through.
  • Toss through snow peas and serve over rice noodles. Garnish with chilli flakes and chopped coriander leaves.
