Apricot and coconut are a match made in heaven! There’s so much healthy goodness packed into these tasty NO-BAKE bars so that you can have a sweet indulgence while still losing baby weight.
So quick and easy – toss the ingredients into your food processor or blender and you’ll have them ready to pop into the fridge within minutes!
Ingredients
- 1 cup dried apricots
- 4 medjool dates – pitted
- 2 tablespoons coconut oil
- 2 tablespoons chia seeds
- ¼ cup desiccated coconut
- ⅓ cup sunflower seeds
- ⅓ cup pepitas
- 2 tablespoons water
Method
- Blitz apricots in a food processor/blender etc until they are resembling a crumb.
- Add dates and coconut oil and blitz again until combined then set aside.
- Blitz chia seeds, coconut, sunflower seeds and pepitas together.
- Add both mixtures together and blitz again.
- Add water then blitz for a final time.
- Line tray with baking paper. (I used a 20cm x 20cm tray)
- Press mixture evenly into tray.
- Pop in fridge or freezer to set.
- Once set, cut into 12 bars.
- Can sprinkle with coconut to serve (this will only slightly elevate the calorie count)
Can be stored in fridge or freezer. They’re sure to be a MASSIVE hit with the kids.
