Today we have a reader recipe that would make a perfect lunch box filler or healthy snack while following a healthy eating plan.
You could make many variations of this muffin. You could use pears in place of the apple, raspberries or even blueberries.


  • 2 cups wholemeal SR. Flour
  • 1/2 cup brown sugar (you could use coconut sugar)
  • 3 Tsp cinnamon
  • 2 apples peeled and diced
  • 1/4 cup Apple sauce
  • 1/4 cup coconut oil
  • 3/4 cup light milk
  • 2 eggs


  • Mix all dry ingredients into a bowl
  • Add Apple, Apple sauce and eggs milk and coconut oil mix until well combined
  •  Greese a muffin tray with spray oil
  •  Divide mixture among the 12 muffin holes
  • Place in oven at 180 for 15-20 mins until firm to touch

Makes 12 muffins
