- Tuna & Tomato Sandwich – simple, tasty and healthy. Prepare this sandwich in no time and you can tick “healthy lunch” off your list.
- Spicy Pumpkin Soup – we admit this will take more than 5 minutes to cook but if you make a large batch on the weekend it will take you less than 5 minutes to reheat a serve at lunch time. A great way to ensure you are eating healthy meals without the fuss of loads of cooking during the day.
- Pesto Roast Vegetable Salad – another recipe where a little bit of organisation is required. Roast some veggies on the weekend and then all you have to do is pack the ingredients for this yummy salad in your lunch box to assemble at work or grab ingredients from the fridge at home and you’ll have a 5 minute lunch in a flash.
- Pizza Jaffle – who doesn’t love a toasted sandwich, especially during these colder months. Takes 5 minutes to prepare this tasty little number and probably about the same time to get it in your belly it’s that tasty! If at work, assemble the sandwich in the morning and toast at work (if they have a sandwich press of course).
And just for an extra idea – when you’re really short on time at lunch you can always make a Healthy Mummy Smoothie in under 5 minutes to give you the energy you need for the afternoon.
Five easy ways to ensure you’re eating a healthy lunch without spending too much time in the kitchen.
