This yummy dessert is packed full of flavour with only three ingredients making it quick, simply and easy to prepare. It is gluten free and dairy free
Perfect for those hot summer days when the family want some healthy ice-cream and you can enjoy it too without putting you off your healthy eating plan
Ingredients
- 1 can of full fat coconut milk
- 1tsp vanilla extract
- 1/2 cup frozen pineapple
Method
- Line a small baking tray with baking paper
- Shake the can of coconut milk to mix well
- Pour the coconut milk into the tray and pop in the freezer until completely frozen- this will take 2-3hrs
- Once frozen take out the baking tary and break up into smaller pieces and put into your food processor
- Process the mix for 3min, scrape down the sides and add frozen pineapple and the vanilla
- Continue to blend until mix is nice and creamy scraping down the sides if need be
- Serve in glasses and eat immediately or put back in the freezer to enjoy later
