Yasman Scowcroft has sent us the recipe for these indulgent looking treats that are in fact full of healthy fruit and nuts.

Ingredients 

  • 1 tbsp peanut butter
  • ½ tsp vanilla essence
  • 1 tbsp coconut sugar
  • 3 tbsp Healthy Mummy Mix Vanilla
  • 4 pitted dates
  • 1 tbsp coconut oil
  • 1/2 cup cashews, chopped finely
  • 1 tbsp LSA
  • 4 pieces 70% cocoa chocolate, melted

Method

  • Cover the dates with hot water and set aside for 10 minutes to soften. Drain.
  • Mix all ingredients except chocolate together in bowl.
  • Roll into balls. Dribble melted chocolate on top.
  • Makes: 10.
  • Calories per serve: 104.
